Kunterbuntes winter vegetables with orange-chili aioli

Since this is well known, one of the gluttonous garden blogs in general, it is time to finally take part in a cooking event. Above all, if the initiator is a garden blog!

In the garden it is currently not much to do, as a cooking event is just right. Especially the part known, not the most cheerful and colorful month, is blown to every corner of poor people tribulation. In contrast, however, something can be done, I think. For example, by going to the farmer's market and buy a colorful mountain winter vegetables and cook it:

Kunterbuntes winter vegetables with orange-chili aioli

Ingredients:
all of winter vegetables, offered by the local farmer's market (for me it was a small sweet potato, 1 medium red beets, 2 potatoes, 1 small parsnip, a few florets blue cauliflower, 1 / 4 pumpkin (Hokkaido) , 1 / 2 celeriac )
Also:

2 oranges
1 egg

1 chili pepper
1 teaspoon fennel seeds

1 tsp coriander seeds
2 garlic cloves

200 ml mild olive oil

1 teaspoon vinegar
salt

Preparation:

orange-chili aioli:
rub the orange and squeeze out fine. Then chop the garlic cloves and mash with a wide knife blade or a mortar to feinerm Mus. Then the Knoblauchmus, vinegar and 2 tablespoons of freshly squeezed orange juice mixed thoroughly. Then the egg and half of oil add. The whole mix quickly with a hand blender. Slowly, the remaining oil to be poured. The aioli concludes with salt, the grated orange peel and chili to taste.

The winter vegetables
the coriander and fennel seed in a mortar, crush, dice the vegetables winter coarse, salt, fennel and coriander mixture and a few tablespoons of olive oil. Who is right "orange" like, you can also wear orange or orange zest, mix. Then min at 200 ° C 30-45. cook in the oven. Still hot with the cold bright orange-chili aioli served!

A small tip: if you want to have the roasted vegetables cook evenly, should the vegetables with a longer cooking time (for example, beetroot and parsnips) a little 15 min. earlier in the oven.

And that would be my plan at the last participate in the cooking event gardener Blog realized. Voilà, that was my wintry recipe with oranges!
